Who we are

Bodega was created to bring the spirit of a Spanish wine bar to Centralia, Washington. In Spain, a bodega is more than a place to drink wine — it is a gathering place where food, conversation, and community come together. It is where people slow down, share plates, and enjoy the rhythm of an evening without rushing.

That spirit is what inspired Bodega.

Bodega was founded by chef Sam Cots, who was born and raised in Spain and trained in culinary school in Barcelona. Growing up surrounded by Spanish food culture shaped his approach to cooking from an early age. Tapas bars, neighborhood bodegas, and long evenings around the table were a natural part of daily life, where meals were about sharing and connection as much as they were about the food itself.

After moving to the United States and spending years working in the food industry, Sam saw an opportunity to bring that culture to Centralia. The goal was not simply to open another restaurant, but to create a space that reflects the relaxed and social dining experience that defines Spanish hospitality.

Bodega is also the result of a partnership with his wife, Irene, who is originally from California but spent more than a decade living in Spain. During those years she immersed herself in the country’s food, wine, and lifestyle, developing a deep appreciation for the culture that surrounds Spanish dining. Together, Sam and Irene wanted to recreate that experience — a place where people gather over wine and small plates, where conversations flow, and where time slows down.

At the heart of Bodega is the tradition of tapas. Tapas are not simply small dishes; they represent a way of eating and gathering. Instead of individual meals, the table becomes a shared experience where guests explore different flavors together. Our menu celebrates classic Spanish inspiration while embracing seasonal ingredients and a thoughtful, modern approach.

Wine is an equally important part of the experience. Spain produces some of the most diverse and expressive wines in the world, and our wine program focuses on showcasing those traditions. From crisp coastal whites to elegant reds and classic fortified wines, every bottle on our list is selected to complement the food and introduce guests to the richness of Spanish wine culture.

At Bodega, we believe that dining should never feel rushed. Guests are encouraged to enjoy a relaxed experience — often around two hours — where they can savor dishes, share plates, and enjoy wine at their own pace. Tapas culture is about connection, conversation, and enjoying the moment.
